Our Recipe Kit Contributor – Danielle

Hi! My name is Danielle McNerney, CEO of Save the Moms. My journey with cooking began when I was 8 years old. I wanted to cook fresh and healthy meals for my family after my mom’s battle with cancer.

I soon fell in love with every aspect of cooking and found my love for spices and creativity in the kitchen. It was that love that propelled me to compete on NBC’s “Food Fighters” and win Food Network’s “Chopped Junior”.

After those competitions I began my business, Save the Moms. Save the Moms is on a mission to get teens in the kitchen to help save moms stress and time! Moms (and dads) already have so much to balance in their lives, and it would be great for teens to cook for them!

With Save the Moms recipe cards, that becomes a possibility. Save the Moms recipe cards get teens in the kitchen with our quick and healthy recipes, safety and clean-up tips, and access to exclusive helpful videos taught by me! Let Save the Moms save your family today. Visit us at www.savethemoms.com and follow us on Instagram and Facebook @savethemoms, and on Twitter @chefdaniellemc.

Ingredients

From The Spice & Tea Exchange

1 Chipotle Lime Steak Bowls Recipe Kit

From the Grocer

2 TBSP olive oil

3 Garlic cloves, finely chopped

2 Red bell peppers, sliced into strips

1 Onion, sliced

4 Portobello mushrooms, sliced

1 TBSP kosher salt plus ½ TSP Kosher salt, divided

1 TBSP butter

3 Top-round steaks

3 Cups long grain rice, cooked

2 TBSP cilantro, finely chopped

2 Limes, juiced

Instructions:

HEAT olive oil in a large saucepan over medium-high heat until shimmering. Add in peppers and garlic and cook for 5 mins. Add onion and cook for an additional 5 mins. Add the mushrooms and 1⁄2 tsp. kosher salt.

STIR occasionally. While the veggies are cooking, heat butter in a cast iron pan over medium-high heat until it becomes slightly brown.

SPRINKLE 1⁄2 tsp. of the spice packet on each side of the steaks, and cook for 2 mins per side for medium-rare.

AS the steaks cook, reduce the heat of the vegetables to low. Once all the steaks have cooked, transfer them to a cutting board; slice into strips when cooled.

STIR the cilantro, lime juice, and remaining kosher salt into the rice.

DIVIDE rice, vegetables, and steak into bowls and garnish with more cilantro.

TIP Use a shallow bowl when plating the dish, so you can see all the yummy components of the meal!
