Quick Pickling for the Holidays

Quick pickling is a handy little trick to have up your sleeve, especially when vegetables are abundant or rich and spiced foods are on the menu. It’s fast (sometimes as quick as 15 minutes) and if you have a few of The Spice & Tea Exchange®’s most popular blends on hand, you can create a variety of pickling liquids to match just about any meal you’re serving up.

Quick Pickling for the Holidays

The process of quick pickling essentially sterilizes fresh vegetables and prevents the spread of bacteria. Quick pickled vegetables are great to add to antipasti, cheese, or meat platters, or they can stand on their own as a vegetable salad or side. With all those holiday leftover roasts, make a sandwich and perk up the flavor with a few slices of the pickled vegetables.
Try the recipe below to create quick pickled vegetables using the flavors that work best for your dish!

Quick Pickled Vegetables
Serves 4 as a side/salad

Ingredients:
½ cup rice vinegar

½ cup water
3 tablespoons Ginger Sugar
2 teaspoons Seasonings*

3 cups thin sliced vegetables
1 small sweet onion, peeled and thinly sliced**

Preparation:

  1. In a small saucepan, combine the vinegar, water, Ginger Sugar, and the Seasonings. Bring to a boil over medium-high heat then reduce to a simmer for about 15 minutes until the liquid is reduced to a generous 1/3 cup.
  2. Place the vegetables in a heat proof bowl and pour the hot liquid over the vegetables. Stir occasionally as the mixture cools. When completely cooled, enjoy or cover and refrigerate for up to 5 days.

*Some of our favorite seasonings to try include: Vik’s Garlic Fix, Chef Donna’s Adoro, Gourmet Pepper, and Tuscany. Pickling Spice works great, just strain the blend out of the liquid before pouring over vegetables.
**We suggest trying sweet onions, carrots, cucumbers, cauliflower, celery, and mushrooms.
