From the Grocer:
1 -15oz can plain tomato sauce (rinse and keep the can for preparation)
2 -12” tortillas
1 cup shredded mozzarella cheese
1 pkg mini pepperonis
Preheat oven to 425°F. Lightly grease a muffin pan with non-stick spray.
In a small bowl, mix tomato sauce with Signature Spice Blend and Vik’s Garlic Fix Spice Blend. Set Aside.
Place a tortilla on a cutting board. Using your tomato sauce can, cut circles out of the tortilla for your pizza crust (the key is to press in a rocking motion). Use a small cookie cutter or other method if you prefer. Circle should be a similar size to the top of the muffin pan opening. Repeat until you’ve created 12 pizza crust circles.
Place one tortilla crust in the bottom of each muffin tin. Press into the sides to ensure the crust forms a cup to hold the ingredients.
Using a teaspoon, scoop pasta sauce into each muffin tin atop the crust.
Sprinkle with cheese (we recommend a good amount).
Add 3-5 mini pepperonis to the top of the pizza. Sprinkle with more cheese.
Bake 10 minutes, or until golden and bubbly.
Remove from oven and rest for 2 minutes. Serve and enjoy!
